Local Pork is very much on the menu here at Thatcham. We have two unique suppliers on our doorstep, Russell Kilvington from Newbury, who has a Pork farm minutes from our factory in the heart of the Berkshire countryside. These pigs live and play in and around their family units in straw-filled homes and are naturally reared and fed free-range.
The meat quality is superb because it has the right covering of fat. “Not too thick, not too thin” and a good large eye of meat along the loin with a good confirmation on the leg. This covering of fat is essential on pork because it helps enhance and seal in the full flavour and it also keeps the meat tender and juicy when roasting or grilling. You can’t get better!
